Summary:
Citric acid fermentation is one of the largest biotechnical industries with a history dating back about a century. It may be assumed tliat around two thousand scientific contributions or more, and several hundred patents are related to this endeavour. The present article wants to collect some, more or less, known historical data to review how our knowledge has increased over these hundred years, and to add some thoughts, perhaps superfluous - perhaps stimulating.
